Creamy Cajun Seafood Pasta

Creamy Cajun Seafood Pasta

1/2 stick unsalted butter
1 green bell pepper, diced
3 scallions, chopped
2 Tablespoons sundried tomatoes, chopped
3 garlic cloves, minced
1/4 cup all-purpose flour
2 teaspoons tomato paste
1/2 cup dry white wine
1 pound cooked shrimp, peeled and deveined
1 10-ounce can lump crabmeat
1 cup half and half or heavy cream
1 teaspoon red pepper flakes
2 cups baby spinach
16 ounces penne pasta, cooked according to package directions
Shredded Parmesan


In large pot or Dutch oven, melt butter. Add the bell peppers, scallions, and tomatoes and saute until tender about 5 minutes. Add the garlic and cook for an additional minute. Stir in the flour until the vegetables are coated and all is mixed evenly. Stir in tomato paste. Add the wine and seafood, let simmer for about 3 minutes. Pour in the cream (or half & half). Add Slap Ya Mama Gumbo Mix and red pepper flakes and cook until thickened, about 5 minutes. Stir in spinach to wilt.

Fold the cooked pasta into the sauce. Serve in bowls and top with shredded Parmesan. Serves 6 to 8.
